How To Make Campbell’s Easy Chicken Enchiladas

Ever find an orphaned coupon on a shelf at the grocery store? The one that someone chose not to use and was too lazy to dispose of properly?

The next time you find an abandoned coupon, think of a meal in which to use it.

I call this the “Abandoned Coupon Game”.

For example:

I was in the soup aisle last week.  I discovered a crumpled up coupon for $1.00 off of 1 Campbell’s Soup for Easy Cooking. Kudos to Campbell’s for making such an eye-catching title. I saw “Easy Cooking” and was hooked.

This is a fairly new product. Currently, it only has four flavors. So it was nearly impossible to track down in the sea of red soup labels. I’m 98% sure that’s why our coupon litterbug abandoned it.

(Turns out, it’s over by the broths.  At least at Meijer.  Go figure.)

So I bought this Mexican Style Tomato Soup for $1.24 with the coupon.

I’ve never made enchiladas before last night.  You guys, they were tasty.  My 2-year-old had seconds AND thirds.

Campbell’s Easy Chicken Enchiladas

Prep Time cropped      Prep Time:  5 Minutes

bake time cropped     Bake Time:  25 Minutes

Makes cropped       Makes:  4 Servings (2 enchiladas each)

What you’ll need:

  • 1 carton (14 oz.) of Campbell’s Mexican Style Tomato Soup
  • 2 cups chopped cooked chicken
  • 1 cup shredded Colby Jack cheese
  • 8 flour tortillas or corn tortillas (6″), warmed
  • Chopped fresh cilantro leaves (optional)

How to make it:

STEP 1:  Heat oven to 350°F.  Stir 1/2 cup soup, the chicken and 1/2 cup cheese in medium bowl.

STEP 2:  Spoon about 1/4 cup chicken mixture down center of each tortilla.  Roll up tortillas around filling and place seam-side down in to 11x8x2″ baking dish.  Pour remaining soup over tortillas.  Cover baking dish.

STEP 3:  Bake 25. or until enchiladas are hot and bubbling.  Top with remaining cheese.  Sprinkle with cilantro, if desired.

(I served mine with lettuce and tortilla chips.)

((Also, I didn’t have 6″ tortillas, so this recipe made five 8″ enchiladas.))
